Just around the corner from the Koubba Ba'adiyn is a labyrinth of qissariat (covered markets) lined with stalls serving tajines, steaming snails and the occasional stewed sheep's head hot off the gas burner. Tourists at food stalls in the Djemaa El Fna may think they're being adventurous, but the qissariat are where the real action is.
